A tall tap exists for one reason: a bowl that sits on the worktop rather than in it. That makes the geometry arithmetic rather than taste — the spout has to clear the rim of your bowl and still point inside it. The figure to read is spout height measured from the tap hole, not overall height, because the part below the worktop tells you nothing. Add the rim height of your bowl, allow a few centimetres of air, and you have the minimum. Too tall is a real fault too: water falling from 25 cm into a shallow bowl splashes onto the worktop, and no amount of aerator fixes it. Spout reach should land the stream near the middle of the bowl, roughly half the bowl diameter.
